I like to roast these enormous pork chops on a bed of onion rings and Apple rings.
Salt and pepper the pork and lay on thinly sliced onion and apple rings and roast in the oven for about 30 minutes till done to your liking, I turn them over half way through and check that the onions and apples aren't burning on the bottom. the fat from the pork cooks the onion apple mix which is delicious served with green beans and mashed potato.
Perfect crackling takes a little forethought. The skin needs to be dry preferably out of its packaging and dried in the fridge for a couple of days.
Score the fat deeply but not through to the flesh or it will go soggy.
Just before roasting rub in coarse salt - lots of it and roast in a very hot oven for 20 mins then a slow oven for as long as it takes to get the pork to the desired internal temperature 177ºF ,77ºC. Do not cover the joint while cooking.
I cook on a bed go onion so I can blitz a good oniony gravy to serve with the joint and of course apple sauce!
